Ingredients

  • 12 slices Wholemeal or polar bread

  • 2 large avocados

  • 250 g Leftover roasted chicken

  • 200 g fresh cheese

  • 100 g Arugula

  • 1 Lemon

  • 1 handful Young shoots

  • Some herbs or sprouted seeds

  • Olive oil

  • Salt and pepper

Directions

  • Start your avocado, chicken and vegetable sandwich recipe by squeezing the lemon. Open the avocados, pit and peel them. Cut them into thin strips, sprinkle them with lemon juice. Rinse and wring the arugula. Cut the chicken into strips.
  • Spread the slices of bread with fresh cheese. Add salt and pepper. Place a little arugula on half the slices. Add strips of avocado, chicken, baby sprouts and the rest of the arugula. Drizzle with oil.
  • Cover with a slice of unfilled bread and press. Cut the sandwich in half diagonally. Overlap the two halves. Hold everything with a wooden spike. Keep fresh until ready to serve.
