  • 600 g Chicken breasts

  • 2 c. sunflower oil

  • 1 C. Curry coffee

  • 1/2 tsp. freeze-dried garlic

  • Salt and pepper

  • For the satay sauce:
  • 15 cl Coconut cream

  • 2 crushed garlic cloves

  • 4 c. peanut butter with chunks

  • 1 C. Soy sauce

  • 2 c. Lime juice

  • 2 c. red curry paste

  • 1 C. Turmeric

  • 1 C. Ginger powder

  • 1 C. brown sugar


  • Start this recipe for satay sauce skewers by cutting the chicken into cubes. Put them in a bowl with the oil, curry, garlic, salt and pepper. Mix well and let marinate in the fridge while the sauce cooks.
  • The sauce: put the ingredients in a saucepan. Bring to a boil and cook for 20 minutes over low heat.
  • Preheat a grill, barbecue or plancha. Thread the chicken pieces on wooden skewers. Place them on the grill. Cook for 15 to 20 minutes, depending on the size of the pieces. Serve immediately with hot or cold satay sauce.
