  • For the dough:
  • 500 g T45 flour

  • 20 g fresh baker’s yeast (or 10 g dry yeast)

  • 10 g Salt

  • 2 c. olive oil

  • For garnish :
  • 3 Mozzarella balls

  • 4 thin slices Ham

  • 3 c. Tomato sauce

  • 1 ripe tomato

  • 2 Basil stems

  • Salt and pepper


  • Start this calzone recipe by preparing the dough. In a bowl, crumble the yeast and mix in 30 cl of warm water. Pour the flour and salt into the bowl of a food processor. Form a well and add the diluted yeast and half of the olive oil. Knead for a long time at low speed to obtain a soft dough. The dough should not be sticky. Form a ball. Place it in a bowl, oil it, cover with a clean cloth and let stand for 10 min at room temperature (25 ° C) – or in a fan oven at 40 ° C, leaving the door ajar. Then place the dough on a baking sheet and leave to rise for another 10 min at 25 ° C, uncovered. Then spread it gently using a rolling pin to form a rectangle, without pressing too hard so as not to expel all the air. Let it grow again for 10 min.
  • The garnish. Preheat the oven to 230 ° C. Cut the dough into two parts (to make 2 calzones) and spread them on a floured work surface. Pour 1 tsp. tomato sauce in the center of each dough and spread it out thinly.
  • Then garnish half of the pasta with chopped mozzarella, strips of ham and diced tomatoes. Salt and pepper then fold the dough in half and weld the edges well. Spread over the rest of the tomato sauce and put in the oven. Cook each calzone 15 min. Serve the calzone straight out of the oven.
