Ingredients
500 g Paella rice (bomba)
3 large chicken breasts
200 g Sliced chorizo
300 g Small squid
300 g Cooked prawns or prawns
2 Tomatoes
1 yellow pepper
150 g Frozen peas
2 onions
1 Fresh chilli
1 Saffron pod
1 C. Spigol (paella spices)
10 cl Dry white wine
1 l Vegetable broth (prepared with 2 cubes)
3 Lemons
2 c. Chopped parsley
4 c. olive oil

Directions
- Start your sea paella recipe by rinsing and chopping the squid. Head off the shrimp. Open the pepper: remove the seeds and the partitions, then cut it into cubes. Remove the seeds and chop the pepper. Peel and slice the onions. Boil the tomatoes to easily peel them. Seed and crush them. Cut the chicken into small dice.
- Heat the oil in a large paella pan. Fry the onions, parsley and pepper for 5 min over low heat. Add the chicken. Salt and pepper. Cook 15 min then reserve. Replace with calamari. Mix 2 to 3 min over high heat.
- Moisten with white wine. Let evaporate for 2 min. Then add the rice, tomatoes, peas, chorizo, spices and chili. Moisten with the broth. Cook for about 25 minutes.
- At the end of cooking, add the chicken and the shrimps, mix 5 min. Adjust the seasoning and serve with lemon wedges.
Tip: Prepare all the ingredients well before starting the cooking phase. The realization is simple, but requires attention.
